Spaniards call this a table cheese, which means that you can eat it with almost anything; it's that versatile. Thinly sliced on a cheese plate or with a drizzle of olive oil for a snack. Mahon is especially good with fruits and nuts. Try it in salad or melted over grilled vegetables. Like so many other table cheeses, Mahon does wonders over pasta and rice.
