Pizzuta almonds come from Avola, a small town in southeastern Sicilia known the world over for its prized native almonds. Pizzuta is an ancient variety that was brought to Sicilia by the Greeks, and has never been altered or hybridized; over the centuries it developed a heartiness that now makes it less susceptible to climate change. It also does not require irrigation, since it grows better in dry soil, and so it is much more environmentally friendly than California almonds. Nearly all the almonds in Avola are organic - even if uncertified - for the simple reason that they need very little intervention to grow well. Our Pizzuta almonds are selected by Lorenzo Nastasi, a family company founded in 1928 and now managed by Felice Nastasi, whose ancestors have been working with almonds for 90 years over four generations. Nastasi and his team harvest each almond manually and sell to some of the most prestigious pastry chefs in Sicilia.
