Green Hill is a double cream, soft-ripened cows milk cheese with a bloomy rind. Each Wheel has a smooth buttery flavor with a soft, creamy texture. When young, Green Hill is firm, with a texture similar to cold butter. As it ripens, the texture will become softer and creamier immediately under the bloomy rind, and will continue until it has a uniform, honey-like texture to the core--but should not liquefy. We target Green Hill to be perfectly ripe 3-4 weeks before the best buy date.
